Broccoli, Cauliflower & Cannellini Bean Soup serves 6-8 


2 heads broccoli, washed and chopped (incl stalks)

1 cauliflower, washed and chopped, leaves included

1 can cannellini beans, drained

1 large onion, diced 

1 nutmeg (or 2-3 tsp)

1-1.5l vegetable/chicken stock

  • Fry the onion in a little oil for 5 mins

  • Add the veg and stock ( the stock should just cover the veg)

  • Bring to the boil and then turn to a simmer until the veg is soft but not soggy.

  • Add the beans and nutmeg

  • Blitz until silky smooth and season to taste
