Super-quick Vegetable Soup- serves a fair few
Ingredients:
I used the following ingredients but really, use whatever you have lying around in your fridge or freezer! The cauliflower made it very creamy though..
1 onion, quartered
3 leeks, sliced
1/2 bag frozen cauliflower
1/2 bag frozen mixed vegetables
1.5 litres of vegetable/chicken stock
1 tbsp sunflower oil
Method:

Heat the oil in a saucepan and add onions and leeks. Fry for a few minutes.

Add the rest of the vegetables and stock.

Bring to the boil, then turn down the heat and simmer until the vegetables have softened.

Turn off the heat and blend with a stick blender.

Serve piping hot and with some delicious cheese quesadillas.
