Super-quick Vegetable Soup- serves a fair few


I used the following ingredients but really, use whatever you have lying around in your fridge or freezer! The cauliflower made it very creamy though..

1 onion, quartered

3 leeks, sliced

1/2 bag frozen cauliflower

1/2 bag frozen mixed vegetables 

1.5 litres of vegetable/chicken  stock

1 tbsp sunflower oil


  • Heat the oil in a saucepan and add onions and leeks. Fry for a few minutes.

  • Add the rest of the vegetables and stock.

  • Bring to the boil, then turn down the heat and simmer until the vegetables have softened.

  • Turn off the heat and blend with a stick blender.

  • Serve piping hot and with some delicious cheese quesadillas.
