Honey & Mustard Chicken serves loads!!
Ingredients:
A mix of approximately 20 thighs & drumsticks
2 onions
5-6 tbsp runny honey
1-2 tbsp grainy mustard
2tsp garlic paste/2 tsp crushed garlic
I AM GIVING TWO METHODS FOR COOKING THIS DISH; ONE QUICK AND ONE SLOW. THE SLOW ONE HAS A MORE INTENSE FLAVOUR BUT THE QUICK ONE STILL TASTES GOOD!
Method: (SLOW)

Preheat oven to 100C.

Cut up the onions into quarters and put them into a large roasting tray.

Place the pieces of chicken on top.

In a bowl, combine the honey, garlic and mustard.

Pour over the chicken and massage well! ( I use disposable gloves )

Cover with foil and cook for 4-5 hours, baste around half way through.

Take off the foil and turn the oven up to 150C for about 20 mins or until the skin is crispy and brown.

Method: (QUICK)

Preheat oven to 175C.

Cook, uncovered for 75 mins, basting after 60 mins.
