Leftover Cauliflower Leaves
Don't throw away those cauliflower leaves or stalks! They make an excellent side dish or snack. During my cookery lessons, this is one thing that I always demonstrate to my pupils. It's so easy and beyond delicious. Give them a try!
Ingredients:
The leaves and stalks of a cauliflower (minus the very hard bottom bit, which can't be used)
2 tsp rapeseed oil
1 clove garlic, minced
1 tsp cumin/hemp/coriander/fennel seeds
sea salt
Black pepper
Method:

Chop the cauliflower stems and leaves into rough pieces.

In a dry non-stick frying pan, heat whichever seeds you are using until you hear them begin to pop. Take them off the heat immediately and transfer to a bowl.

In the same pan, heat the oil and add the chopped leaves and garlic. Stir fry for a few minutes.

Add the seeds, a grind of black pepper and a pinch of sea salt.
