Quick Pasta Sauce
This is a basic tomato sauce, for when you don't have time to make a longer version. It's cheaper and much healthier than a store-bought one and freezes really well, so that you can bulk cook it and store for emergencies!
Ingredients:
500g passata
1 tbsp olive oil/rapeseed oil
4 cubes frozen spinach
2 tbsp garlic paste/2 cloves crushed garlic
1-2tbsp Italian herbs (dried)
60-70g full fat cream cheese
Parmesan/grated cheese (optional)

Method:

Heat the oil in the pan.

Add the garlic and stir for approx 20 seconds.

Add the pasta and spinach and stir well.

Once all the spinach has defrosted, add the herbs. Stir and bring to the boil.

Turn to a simmer and stir in the cream cheese.

Once all dissolved, season with salt and pepper to taste. Add some parmesan or grated cheddar if you like. Stir and taste.

Pour over your pasta!
