Quick Pasta Sauce

This is a basic tomato sauce, for when you don't have time to make a longer version. It's cheaper and much healthier than a store-bought one and freezes really well, so that you can bulk cook it and store for emergencies!

500g passata

1 tbsp olive oil/rapeseed oil

4 cubes frozen spinach

2 tbsp garlic paste/2 cloves crushed garlic

1-2tbsp Italian herbs (dried)

60-70g full fat cream cheese

Parmesan/grated cheese (optional)

  • Heat the oil in the pan.

  • Add the garlic and stir for approx 20 seconds.

  • Add the pasta and spinach and stir well.

  • Once all the spinach has defrosted, add the herbs. Stir and bring to the boil.

  • Turn to a simmer and stir in the cream cheese.

  • Once all dissolved, season with salt and pepper to taste. Add some parmesan or grated cheddar if you like. Stir and taste.

  • Pour over your pasta!
