Za'atar Chicken- serves a family of 6
Ingredients:
1 large whole chicken
A good squeeze of garlic paste (I use Gia)
2 tbsp za'atar
1 bag shallots
1 cup water
Method:

Pre-heat the oven to 170-180C

Put the chicken into a deep roasting dish

Rub the garlic paste and za'atar all over the chicken. ( I use disposable gloves for this)

Put the shallots into the dish (leave the skins on).

Add one glass tap water.

Cover with foil tightly.

Put in the oven for around 2.5 hours and then uncover for another 20-30 mins if you want crispy skin.

The best part is squeezing out the shallots from their skins when you eat it!
