Za'atar Chicken- serves a family of 6


1 large whole chicken

A good squeeze of garlic paste (I use Gia)

2 tbsp za'atar

1 bag shallots

1 cup water


  • Pre-heat the oven to 170-180C

  • Put the chicken into a deep roasting dish

  • Rub the garlic paste and za'atar all over the chicken. ( I use disposable gloves for this)

  • Put the shallots into the dish (leave the skins on).

  • Add one glass tap water.

  • Cover with foil tightly.

  • Put in the oven for around 2.5 hours and then uncover for another 20-30 mins if you want crispy skin.

  • The best part is squeezing out the shallots from their skins when you eat it!
